胰島是的內分泌部分，是許多大小不等和形狀不定的細胞團，散布在胰的各處，可控制碳水化合物的代謝，如胰島素分泌不足則患糖尿病。胰島能分泌胰島素與胰高血糖素等激素。人類的胰島細胞按其染色和形態學特點，主要分為α細胞、β細胞、γ細胞及PP細胞。α細胞占胰島細胞的20%，分泌胰高血糖素；β細胞占胰島細胞的60-70%；分泌胰島素；γ細胞占胰島細胞的10%，分泌“生長抑素”；PP細胞數量很少，分泌胰多肽。
